There's also a vegetarian version of the Fresh Lunch Bowl, and of course there are other tasty options in the lunch menu. Many customers start their meals with the Chicken Pozole, which is a traditional soup with Mexican rice, hominy corn, spices, and fresh lettuce.

"The Chicken Pozole is quite comforting, and then some patrons continue on with the Chimichanga, which is a favorite dish in the northern part of Mexico," says Galindo. "Meat, beans, rice, salsa, and cheese are all stuffed into a crisply rolled wheat tortilla, and then we serve it with a homemade creamy avocado sauce for dipping plus crispy tortilla chips and a side dish chosen by the customer."

The wet tacos are also a perennial favorite, with beef, chicken, or pork inside 4 rolled white corn tortillas. It's covered by mole, roja or salsa verde, depending on the choice of our customer, and then Galindo tops it all off with fresh salsa, cheese, Mexican crema, and freshly chopped lettuce.
