Hamanasi Resort's Executive Chef Cooks for British Royalty

A native of Belize, Sheridan moved to California as a child and would later discover her passion for cooking while living in Los Angeles. After graduating in the top of her class from culinary school, she worked as a private chef in Beverly Hills, eventually feeling the call to return to Belize. Sheridan describes her culinary style as Â“fresh meets fusion,Â” which incorporates fresh fruits, vegetables, and herbs grown on the Hamanasi property. Local flavors and Garifuna culture influence SheridanÂ’s dishes which often include traditional ingredients such as cassava, cilantro, chayote, plantain, and coconut.

Marcia has been with Hamanasi from the beginning, establishing herself as a vital member of the kitchen staff. Her Garifuna roots and training from the Culinary Institute of America result in inspired creations.

When choosing the dishes to serve British royalty, Sheridan and Marcia decided on Garifuna favorites that showcase some of these traditional flavors. Sahul, cassava cake, banana frindas, and hudut, a red snapper stew were all enjoyed by the Prince. Sahul, a sweet porridge which incorporated local rum was the favorite dish. A regularly rotating menu at Hamanasi allows these chefs to share similar dishes and tastes with guests.

When requested, Sheridan is quick to create delicious vegetarian and vegan options using the same principles. A few favorite dishes on the Hamanasi menu include: Baked Spiced Curry Chicken Quarters with Pineapple Glaze, Relleno, also known as Black Soup, and the delectable Manatee Bread with Carrot Coconut Ginger Soup. Extensive wine, spirits, and cocktail options offer diverse pairing opportunities.
